How do these Indian food companies incorporate sustainable practices.



From recycling and reusable packaging to finding local ingredients, food companies large and small are making their operations sustainable.

Home cake maker Niyyaati Pramoad started her Bengaluru-based cloud-bakery Gobble Cake in 2020. Sustainability was not part of her plan. Like many home bakers, she relied on plastic containers with single-use that were decorated with colorful stickers to distribute freshly baked cakes and bomboloni cakes to customers. But, when she realized the negative impact that plastic packaging could be causing to our environment, she began researching sustainable alternatives available on the market and shifted to a more sustainable option. If it’s using environmentally friendly packaging or local ingredients, many big and small food companies have adopted sustainable practices into their business plans.

From home bakers such as Gobble Cake and the Hyderabad-based Started With A Cookie to health-food brand The Huda Bar and more established food brands, creating companies that are sustainable ad using eco-friendly options at every turn can be seen as the common theme running across them all.

Vocals for local

Small-scale food companies have made it a goal to purchase fresh and, sometimes organic ingredients or even produce locally-sourced vendors. “Wherever feasible, I purchase my ingredients from companies that adhere to ethical and sustainable practices. I source cocoa powder and coconut sugar from Indian Indians and the organic spice of LAW India (looms and weavings), which is a women-owned social enterprise. I also source organic, fresh products from Urban Kisaan and Gourmet Garden for my recipes.” states Harini Challapally from Started with a Cookie, specializing in gluten-free desserts.

Niyyaati from Gobble Kitchen points out that the transition to sustainable practices may be difficult for her small-scale brands. However, she believes that finding cheaper, alternative alternatives like purchasing bulk quantities of ingredients is a great way to begin. In a similar vein, Pratibha Panth, co-founder of The Huda Bar, a Bengaluru-based company. The Huda Bar, which concentrates on organic granola bars and nuts, says, “We collaborate with local groups, cooperatives, and vendors to promote local organic and natural food items. There have been occasions where the absence of preservatives or chemicals can make the product available to us; however, we will need to consider the larger picture and develop ways to help create sustainability in the future.”

Eco-friendly packaging

In creating a sustainable food company, Many small-scale businesses begin by making environmentally friendly packaging. The company, With A Cookie, which is only a few months over a year old, has been using plastic-free products from the beginning. “I use windowless paper boxes and brown paper bags, both of which are locally sourced via DePack Wrap. I employ customized cloth bags that I purchase by Rewheel Eco Solutions, another local small-scale company for larger orders. My logo-related stickers from Blue Cat Paper are made from tree-free materials and an adhesive made of water,” says Harini.

Niyyaati She, who changed to brown boxes to deliver her cakes, explains to her that packaging made of plastic utilized by a variety of brands can be easily replaced. She says, “I didn’t use any logo or print the brand’s name on the boxes, as logos with graphic designs are typically used on the plastic materials. The customers love the way that the packaging is simple and minimalist.”

Huda Bar Huda Bar makes use of biodegradable packaging to package its products and provides customers the possibility of returning glass bottles and some of its containers to recycle. Pratibha Panth believes that consumers can contribute to the environment by choosing food brands that don’t use single-use plastic and reuse or recycle biodegradable containers. “Reusing glass bottles and containers for storage is common in Indian households,” she says.

Promoting the message through social media

Many food companies affirm that social networks have been crucial in spreading the concept of sustainability and making their brands more popular. “I don’t exaggerate when I claim 90% of customers came across my business via Instagram. Each brand or vendor we’d like to extend assistance to or get more information is only a DM or message away.” Says Niyyaati.

Social media users and, in particular, Instagram is putting out different content that brings sustainability into fashion. From a simple, DIY-style video to reels of sustainable packaging, these trends are gaining popularity online. This has created new opportunities for food companies to promote their products more effectively.

“Everyone is studying sustainability. The public is eager to know about the people who work behind the scenes, meet our team of small-scale farmers and vendors from across the country and be aware of the values behind the brand. Social media has helped us to do that,” says Pratibha.

What are brands big enough to promote sustainable practices?

The Tamil Nadu Mason & Co organic chocolate maker aims to help farmers. “We source our beans from ethically and organic certified farmers and co-ops in Kerala, Tamil Nadu, and Karnataka,” says Mansi Reddy, marketing director at Mason & Co. The company specializes in chocolate bars with unique flavors and cacao products like cacao powder drinking chocolate and cacao nibs.

Araku Coffee, which sells coffee made by farmers of tribes in Andhra Pradesh’s Araku Valley, also has an eatery located in Bengaluru offering a comprehensive menu, including gluten-free cakes, vegan waffles, to roast chicken with scotch eggs and vegemite. The dishes are all prepared from scratch using seasonal ingredients. “We make sure that our processes create the least amount of waste possible, including our composting practices at coffee plantations and the products we choose to use in our menu. An example of this is the Cascara bonbon. Cascara is the outer layer that covers coffee cherries is usually removed during the process of making coffee. However, the coffee cherries located in Araku, Andhra Pradesh, are lovely. Therefore, we chose to include them on our menu, in the form of bonbons, which we serve alongside our the coffee.” Says Manoj Kumar, Co-founder of Araku Coffee. Araku Coffee.

The company began by selling its coffee in international auctions of specialty coffees before opening the outlet in Paris and later found in Bengaluru, India. Manoj informs TNM, “Our coffee is harvested using bio-dynamic methods in small plots and is harvested manually. Our method of regenerative agriculture enhances the overall health of the soil.”

Manoj says that his staff has been too extreme efforts to ensure that the furniture and decor at the cafe are compatible with their values. “Our chandeliers, designed by Sandeep Sangaru, are bamboo. The railings and shelves are made from recycled metal. Our vents are made from recycled paper, and we do not use single-use plastics in the food preparation area.” Sandeep says. Araku Coffee’s takeaway cups and coffee pouches are biodegradable and don’t have an outer coating of plastic.

Additionally, Mason & Co produces waste made up of cacao bean shells made from organic material and supplies local farms with it to use for soil and compost.

No matter how you decide to split it up, you will be more productive and accountable when you set up concrete working hours throughout the day. 

Organize Your Space 

One of the difficulties of working from home is your personal life and work-life blending together. It can be impossible to focus on your work if there is a big pile of dishes in your line of vision. You can take time out of your work from home day to keep your space organized.

But when you’re working from home it can help to see your own goals and deadlines on a planner to point you in the right direction. From here, you can start breaking down tasks into actionable items. Then, you’ll be able to work on them in your dedicated working hours and make the most of your day. 

Take Thoughtful Breaks 

When you work at home you can make the most out of your breaks. You can do different activities to keep yourself energized and ready to conquer more tasks. Take these times throughout the day to work on yourself. You can do activities on your breaks like:

  • Reading a chapter of a book
  • Doing a 15-minute workout
  • Taking a stroll with your dog
  • Running a quick errand 

When you are working at home, you have the flexibility to incorporate your ideal lifestyle into your workday. So try to use your break times to do things that you wouldn’t be able to do if you worked at an office.
